Ingredients for Çiğ Börek (Original) Recipe

For the dough

4,5 cups of flour
Approximately 2 teaspoons of salt
1-1,5 cups of water

For the filling;

350 grams of medium fat minced meat
Half grated onion
Black Pepper
Salt and water

How to make Çiğ Börek (Original) Recipe?

My recipe is the recipe of my dear grandfather, who is a 40-year raw pastry master. Bon appetit to everyone in advance.

* Preparation of the dough: It is a dough consisting of flour, salt and water (the trick of the dough should be a hard dough) Let’s adjust the water by eye according to this consistency.
* Preparation of the filling; Let’s grate half an onion into the single-ground medium-fat minced meat.
* Let’s add salt, black pepper and dilute our mince.
* Let’s divide our dough into meringues and open it.
* Put the minced meat inside, fold it and cut it from the edges (we cut it so that the edges stick better).
* Let’s fry upside down in hot oil and enjoy.

What are the Tips and Tricks of  Çiğ Börek Recipe?

You should add the flour slowly in a controlled manner and get a hard dough.
If you do not dilute the minced meat, it will gather somewhere in your pastry. Your minced meat should not be dry in order to distribute all over your pastry.
Since you will fry the pastries in hot oil, they will fry very quickly. Therefore, you should not prepare the other one while it is frying first. After preparing all of your fritters, you should proceed to frying.
When frying the fritters, you should fry them back to front in a controlled manner without burning.

You can prepare vegetable soup to serve the dumpling as a meal for main meals.
