Mixed Turkish Pide Varieties (Homemade) Recipe How to Make?
For the dough of our pita bread, let’s take flour and salt into a suitable kneading bowl and pit the middle part. If your dessert spoons are too big, you can use them as 2 teaspoons.
Let’s take water, yeast, oil and sugar into the middle and knead our dough. Our dough will be a soft dough. If you wet your hands from time to time, it will be easier to collect the dough.
After collecting the dough, let’s stretch it, cover it with a cloth and leave it to ferment for 40 minutes.
I will prepare a little bit of everything for the filling of our pita bread, I will use whatever I have at home. You can adjust the ingredients according to yourself. For the minced meat filling, add the grated onion, finely chopped red and green peppers, salt, black pepper, red pepper powder, salt, black pepper, red pepper powder and mix with our hands.
For our spinach filling, add salt, red chilli powder and black pepper on the spinach and mix. In addition to these, I will use grated kashar cheese, a mixture of curd and kashar cheese and sausage slices as filling, you can use different ingredients as you wish.
Let’s roll out our yeast dough and let’s get the air out of it, then let’s take it on the floured counter and collect it with our hands.
Then divide our dough into 8 equal pieces. Let’s turn our pieces into meringues. Put our meringues on the baking tray where we spread baking paper and cover them with a clean cloth to prevent them from drying out. Then roll out our meringues one by one lengthwise. Place the first 2 meringues on the baking tray where we spread baking paper. The baking paper used here will prevent your pitas from sticking to the tray, so your tray will not be dirty.
Place our minced meat filling in the middle and fold the edges of the dough inwards.
Let’s bake in the oven preheated at 230°C by applying egg yolk so that the edges are nicely browned.
Roll out the other meringues in the same way. Put the rolled out doughs on the tray, place the spinach filling and close the edges inwards.
Place the sausage slices on our pita bread, brush the edges with egg yolk and put them in the oven. Let’s prepare our other doughs with kashar cheese and curd cheese. I placed sausage slices on my pita with kashkaval cheese. As with the others, let’s fold the edges of these as well, brush them with egg yolk and put them in the oven.Let’s prepare our last 2 doughs with minced meat mixture, sprinkle kashar cheese slices on one of them.
Fold the edges again and spread the egg yolk and pour the remaining egg yolk on our pita with minced meat.
Let’s bake our pitas in the oven respectively. After taking our cooked pitas out of the oven, let’s spread butter on the edges and take them between a clean cloth. In this way, your pitas will be softer. Bon appetit in advance to those who will try.
